1/3 cup(s) cold water
1/3 cup(s) fresh lemon juice
1/4 cup(s) extra-virgin olive oil, divided
1 cup(s) organic quinoa, cooked
1 cup(s) tomato, diced
1 cup(s) cucumber, finely diced, unpeeled, seeded
1/4 cup(s) fresh parsley, chopped
1/4 cup(s) fresh mint leaves, chopped
1/4 cup(s) red onion, finely diced
1 teaspoon(s) garlic, minced
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper, freshly ground
In a large bowl, combine bulgur, water, lemon juice, and 2 tablespoons of the olive oil; mix well.
Let stand for 30 minutes or until most of liquid is absorbed.
Stir in remaining 2 tablespoons olive oil and remaining ingredients; let stand 10 minutes to allow flavors to develop.
